The Global G-21 is a classically shaped and best-selling boning knife in the Global range. Its long, narrow 16 cm blade tapers to a fine point, allowing precise work around the bones in cuts of beef, lamb, or pork, making it ideal for extracting sizable pieces of meat.
The flexible blade also excels at removing skin and filleting fish. The G-21 features a bolster, which improves grip and safety, particularly when working with raw meat or fish. For professional kitchens, a fully forged version is available under the code GF-31.
